
Bozbash
This hearty soup is made from tender beef, sweet grapes and chickpeas in a fragrant broth. It differs from other soups with dressing by the obligatory ingredient of chickpeas (aka Turkish peas, ram peas, nohut, nat). A characteristic feature of the preparation of bozbash is the additional frying of already boiled and washed lamb. Served with bread baked on a grapevine. And the use of a wood-fired oven adds depth and richness to the taste.
